Cheese Popcorn

Servings = 4

Preparation time 48 hours, cook time 5 minutes


100g cheddar cheese


  1. Line a baking sheet with baking parchment.

  2. Cut the cheese into small cubes and place on the lined baking sheet.

  3. Cover with a clean tea towel / kitchen towel and leave in a dry place for 48 hours. 

  4. Once the moisture has come away from the cheese, pop in a pre-heated oven at 180◦C for 5 minutes.  You should see the cheese “pop” like popcorn.

  5. Remove from the oven and let the cheese popcorn cool.

  6. These will keep in an airtight container for 2 days.

Keto Bread Rolls

Servings = 6 rolls

Preparation time 15 minutes, cook time 12 - 14 minutes


2 cups almond flour

1 tbsp baking powder

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

3 cups shredded mozzarella

2.5 oz full fat cream cheese

2 large eggs


  1. Pre-heat oven to 200◦C.  Line a baking sheet with parchment paper.

  2. In a medium mixing bowl combine the almond flour, baking powder, garlic powder, onion powder and Italian seasoning.  Mix until well combined.  

  3. In a large microwave safe mixing bowl, combine the mozzarella and cream cheese.  Microwave for 1 minute 30 seconds.  Remove from the microwave and stir to combine.  Return to the microwave for 1 additional minute.  Mix until well combined. 

  4. To the large mixing bowl add the eggs and the almond flour mixture.  Using your hands, mix until the ingredients are well incorporated.  If you are having a hard time mixing the ingredients together, put the bowl back in the microwave for another 20 - 30 seconds to soften.  If the dough starts sticking in your hands, wet your hands slightly and continue working the dough.

  5. divide the dough into 6 equal portions.  Using your hands, roll each portion into a ball. 

  6. Put the rolls onto the middle rack of your pre-heated oven for 12 - 14 minutes or until golden brown.

  7. Store in an airtight container in the refrigerator and reheat if required, in the oven or toaster.

Almond Crackers

Servings = approximately 30 crackers

Preparation time 10 minutes, cook time 10 minutes



1 large egg

2 cups ground almonds

¼ tsp pink Himalayan salt

1 ½ tbsp unsalted butter - softened


  1. Mix all the ingredients together in a bowl until well combined.  You could add a seasoning of your choice, such as Italian herbs, cracked black pepper, Parmesan cheese etc.

  2. Roll out the dough between baking parchment paper to your required thickness.

  3. Cut into squares, a pizza cutter makes this step so easy.

  4. Using a palette knife, place the crackers on a lined baking sheet.

  5. Bake at 180℃ for 10 – 15 minutes.

  6. Allow to cool on a wire rack.
